Q2. 「醬」的由來和歷史History of Sauce
A: 「醬」是「醯」和「醢」的總稱,起源於中國。根據歷史記載,於西元3000年前之周朝就開始生產醬,到春秋戰國時期就已成為不可缺少的調味品,論語鄉黨篇中也曾提到:不得其醬不食。最初出現的醬是以肉類為原料,一般稱為肉醬,古籍中也有稱為肉醢或醢醬,之後隨著農業的發展,出現以鼓物及豆類為原料,且得到迅速發展,尤其以大豆為原料的豆醬更是發展迅速。目前的醬類趨勢則走向健康方便。
Sauce is composed of acid and salt, originating from China. Sauce was an indispensable seasoning about 3000 BC. At the beginning, it was made from meat, so it is also called as meat sauce. With the development of agriculture, soybean and cereals were used as its material. The development of soybean sauce is particularly quick. At present, health and convenience are two important factors for the sauce.
Q3. 如何分辨醬料的好壞?How can we identify a good or bad sauce?
A: 1.無不良之油耗味。
2.無發霉、酸敗、膨罐之現象。
3.標示要清楚。
1.Without bad oily smell;
2.No mildew, decay or bulged can; and
3.Clear identification or marking.
Q4. 一般調味醬料之保存方式?How to preserve sauce?
A: 1.開罐前應避免陽光直射。
2.開罐後將罐口擦拭乾淨,密封後冷藏,並且儘快使用完。
1.Direct sun shall be avoided before opening.
2.Bottle mouth shall be duly cleaned after opening. Store in the refrigerator of sealing, and use it up as soon as possible.
Q5. 請問貴公司的「黑胡椒醬」與「黑胡椒牛排醬」有什麼不同?
A: 黑胡椒醬其濃稠度較高,是針對一般炒肉絲、肉片、青菜時,肉品青菜本身會釋放出水來之特性而調配,適合調理烹煮時使用。黑胡椒牛排醬則稠密度較低,是針對直接沾食使用而設計的調味沾醬。
